The ultimate mint chocolate cheesecake



Although I joined pinterest a while ago, I never really saw the point in it, but lately I have become a bit more active and started to really enjoy seeing what other people have pinned. It has really broadened my horizons!
Just before Christmas our oven broke. Bearing in mind that pretty much everything in South Africa, shuts down from December the 16th, I had visions of cooking my ENTIRE Christmas lunch on the 4 plate hob. I turned to pinterest in an effort to find a special dessert that didn't require baking and came up with this from My Baking addiction. When I saw it I knew it was perfect. Bearing in mind that mint and chocolate are two of my favourite things. When I was pregnant I used to eat mint chocolate topping by the bowlful  teaspoonful! Plus it is a cold dessert and considering it was 32C on Christmas day, that was perfect. All I can say is it is absolutely divine. It is pretty rich, but quite light and fluffy. I didn't have the correct biscuite, but used mint Romany Creams, also we don't get frozen whipped topping here in South Africa, so I just used cream and whipped it myself. Sadly, it is very easy to eat too much of it. It didn't last very long, but Brenda asked for it today for her Birthday celebration. (It was her birthday last week, but we were away, so having a dinner with my parents tonight). Sorry for the poor picture, but it is quite dark and rainy and this was taken on my phone. My camera sadly is not working since my nephew dropped it on the floor.
